scombroid poisoning

scombroid poisoning
is there a themometer for liquids or potatoes? and another ? about tuna?

so ima freak about food poisoning and like to measure the degrees of my meat when i cook to prevent it.well, i was wondering if there was such a thermometer for liquids?

and can i use a meat thermometer for potatoes? a couple of people have been getting sick from them and i want to cook it just right.

Also, i am making a tuna and mac and cheese mixture, and want to cook it in the oven(to prevent potential scombroid poisoning which cannot be detected by taste, smell or appearance) can this particular poisoning be killed with heat?

i know im paranoid but whatever.rather be too cautious than sick!

You can use a thermometer made specifically for liquids, its known locally as a candy thermometer and can be used for checking the temperatures of boiling liquids. A meat thermometer might break in boiling water as its not made for such a purpose.

Scombroid poisoning has occurred in fresh tuna steaks in various places in the US, it has to do with how long the fish is kept before its cooled. Canned tuna is not a problem, as canned tuna is already cooked and canned immediately after its caught. It's fresh tuna steaks that you have to be careful with not the canned stuff. The problem happened with fresh (raw) tuna that was cooked and served in restaurants, the fish was held too long in nets in water before it was refrigerated.
